After the pancake mix taste test I wanted to share my from scratch pancake recipe from my YouTube show. When you add the malt powder they are untouchable, with it they are still VERY good. Brown Sugar Pancakes Ingredients: 2 cups all-purpose flour (290g | 10 oz) ¼ cup packed brown sugar 4 teaspoons baking powder ½ teaspoon salt 2 tablespoons Malt powder (optional) 1 1/2 cups milk (440ml) ¼ cup butter (60g | 2 oz), melted 1 teaspoon pure vanilla extract 1 large egg Method: In a large bowl, whisk together the flour, brown sugar, baking powder, salt and malt powder if using. In another bowl, whisk together the milk, melted butter, vanilla extract, and egg until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

Fresh Fruit Cookie Cake
Ingredients:
1 package of premade sugar cookie dough
8 ounces cream cheese, room temperature
4 tablespoons honey
2 1/2 cups fresh fruit (strawberries, kiwi, blueberries, mangos, raspberries…)
Instructions:
Preheat your oven to 350 degrees F.
Line the bottom of an 8-inch cake pan with parchment paper. Press the premade cookie dough evenly into the bottom of the prepared cake pan to form a cookie crust.
Bake the cookie crust in the preheated oven until it’s golden brown, about 22-27 minutes. Let it cool completely.
In a small bowl combine the cream cheese and honey. Stir until smooth. Spread the mixture evenly over the cooled cookie crust. Arrange the fresh fruit on top of the cream cheese mixture.
Chill the cookie cake in the refrigerator for at least an hour before serving.

Cream Cheese Grits
Ingredients:
1 cups quick-cooking grits
2 cups milk
4 ounces cream cheese (veggie cream cheese also works really well)
Salt and pepper to taste
Olive oil or butter to serve
Chives to garnish
Instructions:
In a large saucepan, bring the milk to a gentle simmer over medium heat.
Slowly whisk in quick-cooking grits, stirring constantly to avoid lumps.
Reduce the heat to low and continue to cook the grits, stirring occasionally, for about 5-7 minutes or until they have thickened.
Add the cream cheese to the grits, and continue to stir until it’s fully melted and the mixture is smooth. Season with salt and pepper to taste. Garnish with olive or or butter and chives. Enjoy!

Lemon Poppyseed Cake
Ingredients
For the cake:
1 cups sugar
1/2 cup vegetable oil
1/2 cup whole milk
2 eggs
1/2 lemon
1 cup lemon curd
1/2 teaspoon salt
2 cups self rising flour
2-3 tablespoons poppyseeds
Sugar to garnish
Method:
Preheat the oven to 350 and spray a standard size bundt pan with nonstick spray. Set aside.
To a blender add the whole sugar, oil, milk, eggs, lemon, lemon curd and salt. Blend until the lemon is broken down. There will still be small pieces of the rind, that’s good!
Add the flour to a bowl and pour the blender mixture into it. Stir to combine. Add the poppyseeds and stir again. Add the batter to the bundt pan and bake until the center is set and the top is puffed and golden, about 40-50 minutes.
Remove from the oven a cool for 5-10 minutes before Turing it out of the pan. While the cake is still warm sprinkle with granulated sugar. Use a large bowl or bundt pan to flip the cake back and forth, making sure the sugar evenly coats the entire cake.

Cherry Almond Stuffed French Toast
Ingredients:
1 21 ounce can cherry pie filling
Zest 1/2 orange
1/4 teaspoon almond extract
4 eggs
1/2 cup almond creamer
8 pieces brioche bread
Butter to fry and serve (about 3-4 tablespoons)
1/2 cup fry roasted almonds, chopped
Powdered sugar to garnish.
Method:
In a medium bowl combine the pie filling, orange zest and almond extract. Add a scoop to the center of one piece of bread leaving 1 inch boarder to the edge. Place another piece of bread on the top and press the edges to crimp the bread together. Do this with all the bread.
In another bowl combine the eggs and almond creamer. Soak each bread set in the custard for 10 seconds, 5 seconds per side. Let any excess custard drain off.
Add butter to a flat top griddle or pan and heat on medium. Add the French toast and cook until golden, about 3-5 minutes. Add a little pat of butter to the top and flip. Cook for another 3-5 minutes until golden on the second side. Flip the French toast on its edge and cook the edges where the two pieces of bread meet, about 30 seconds per edge. Remove from the griddle and place on a cooling rack.
When you are ready to enjoy add a pat of butter to each piece of French toast. Sprinkle with powdered sugar and garnish with toasted almonds.
